With breakfast sorted the night before, enjoy a sleep-in while the family helps themselves. Better yet, get them to serve you a healthy breakfast in bed. This healthy, colourful, easy breakfast recipe is one to add to your weekly rotation.

Ingredients

2 cups (250g, 8oz) fresh raspberries
1 orange, peeled and pith removed, roughly chopped
1½ cups (375ml, 13fl oz) almond milk
¼ cup (40g, 1½ oz) white chia seeds
1 tsp vanilla extract
1 cup (90g, 3oz) crunchy granola
2 tbsps maple syrup (optional)

Method

Using a high-speed blender or a food processor, process the raspberries (reserving a generous handful to serve), orange and half of the almond milk until smooth.

Divide the mixture between two serving jars or glasses, then pour half the remaining almond milk, chia seeds and vanilla extract into each jar.

Cover and transfer to the fridge for 1 hour. Stir and then return to the fridge overnight.

To serve, spoon granola and pile raspberries on top of each pot, and drizzle with maple syrup, if using.

This easy breakfast recipe can be altered and served with your favourite berries or seasonal fruit.
